Peach Caprese.

I had the most amazing Saturday morning! Why you ask :)? Because I finally have someone to join me at the farmer’s market. And that would be my sweet baby girl Em, and while she didn’t have much of a choice, I think she loved it too. My boys generally have not been interested in my perusing and chatting with the farmers at the farmers market, so to have a little roadie is the absolute best. This is just the first of many mommy and me moments that I am excited to share with her.

In honor of her sweetness, I made the most delicious peach caprese salad with ingredients I picked up from the farmer’s market yesterday. If you, like me, wonder what caprese means, it is an Italian word defined as a salad that is usually comprised of tomato, basil, and mozzarella. I love that version too but it is peach season and right now they are super sweet and delicious.

This peach caprese salad recipe is simple and made with fresh peaches, basil, mozzarella, balsamic glaze, salt, and fresh ground black pepper. Slice the mozzarella and peaches, layer them, add the basil, drizzle with the glaze, and sprinkle with salt and pepper. That’s it! These very simple ingredients stand alone and are so delicious together. They don’t need any bells and whistles, because quality ingredients truly are THE bells and whistles. Enjoy!
