Hey y’all!
Brioche French Toast Casserole is a crowd pleaser and my go-to breakfast when I want a ‘special’ breakfast but don’t have a lot of time. It’s perfect because you can prepare it the night before and pop it in the oven the next morning. So easy and delicious!
Today the special occasion is Father’s Day and we are celebrating my incredible husband who is also an amazing dad. I will write another post with the dinner menu soon, but trust it was the bomb! Do people still say that, lol!?! In any case, I tried to provide various visuals below to make trying this recipe as easy as possible. So check out the step by step photos, a short video, and the recipe! It’s been trial and error as far as getting the timing right so watch it and take it out if you think it’s too dry or keep it in a few minutes longer if it’s too wiggly, five minutes give or take should do the trick.
Recipe
- 8 eggs
- 1 tablespoon vanilla
- 2 tablespoons cinnamon (1 for sprinkling after combining ingredients)
- 2 tablespoons bourbon (optional)
- 4 tablespoons brown sugar (2 more if you prefer it a bit sweeter)
- 1 can unsweetened coconut milk
- 1 loaf brioche bread
Preheat oven to 375 degrees
Butter or spray canola oil in casserole dish (set aside)
Combine eggs, vanilla, cinnamon (1 tablespoon only), bourbon, brown sugar, and coconut milk in a large bowl.
Dip slices of brioche in the egg mixture and place in casserole dish until all slices have been coated with mixture.
Pour remaining mixture over entire casserole.
Cover with foil and refrigerate over night.
Place uncovered in the oven for 30 minutes. The casserole tends to brown quickly, so cover for the remaining 10 minutes.
Serve with butter and warm maple syrup.
*When serving, I cut my brioche French toast into squares.
